Chef Aaron Wright's Mac & Cheese Croquettes

So again one of the only sites I have access to at work is Fox News. I found the fallow recipe for fried  Mac N Cheese. Safety first, this requires using hot oil to fry please be safe watch for splintering.



The Ingredients:

4 cups heavy cream
8 cups whole milk
1/2 yellow onion
1 bay leaf
3 each whole cloves
4 cups cheddar cheese
4 cups Gruyere
1 cup Parmesan
lemon juice
salt
2 lbs of elbow pasta
Eggs
Flour
Bread Crumbs
Oil

I would like to note right now that fallowing the recipe will lead to wasted materials. we have only made this once and the next time we are going to cut some of the ingredients, I will include in the post how its wasteful.

What you will need to do first would be to take the cheeses and grate them. splitting  the cheddar and the Gruyere both into two portions 1 cup and 3 cups. 

After all that grating, and it will take a while, you will need to make a cream base by combining the heavy cream, milk, onion, bay leaf and cloves all in a large pot. bring to boil, simmer 15 min., strain, and reserve. Dispose of whats in the strainer.  (this making what I imagine to be 11 - 12 cups of of liquid)

Takes 6 Cups of the cream base, 3 cups cheddar, 3 cups Gruyere, 1 cup Parmesan, 1 cup of the cooked elbow pasta, to taste lemon juice, to taste salt (this is were that waste comes in, your tossing the rest of the cream base). combine all of this in a blender and puree. Split into two even portions (worry not there is no waste you will use both half's). 

With 3 cups of the mixture and the remainder of the noodles, cheddar, Parmesan, and Gruyere. mix and pore into cake pans. we used three pans and it went like this pan plastic wrap, mac n cheese (about an inch thick across the pan), plastic,  pan plastic wrap, mac n cheese, plastic, pan, then something in the pan to hold it all down. then put this all in the fridge for the night. there was enough of the mac n cheese for us to eat the rest for dinner for four or five.

We have a deep fryer so we just used it but if you don't you can use a deep frying pan and oil just be super careful. this part is so messy but can be so much fun. you want to cut the Mac N Cheese before it warms up to much its easier to handle. i did the ban in two thirds across the width and then every inch or so down the length. this is were it gets messy.

The oil will need to be at 360 degrees. Take the flour put it in a shallow wide bowl or on a plate. Salt it as needed. Put the Bread crumbs in one as well. put the eggs into a wide mouth bowl. Roll the cut Mac N Cheese in the flour, the egg, the bread, and then fry it. take the left over from the Mac N Cheese sauce warm it up and use it for a dipping sauce.

so here goes with the waste two options buy more cheese make more dipping sauce or just make less.
