Garden Pasta Pasta, and Lemon Pepper Shrimp.

(-Mushrooms, Cashews, and Pasta + Couscous, and Bell Pepper)

A while back i had made couscous for Roy he didn't care for it to much thought it was rather dry. i really enjoy it so i was looking around online for recipes. i found this one on fox news. there was a slide show (click link to view). i thought the dish looked good and would do well with couscous.
also we aren't fans of mushrooms so we didn't use them, i used a bell pepper.



 Roy did enjoy the couscous much more this time we just got a box of couscous and prepare as instructed. in place of the pasta. we also didn't use the cashews.

1 lb. thin whole grain pasta
1 pint cherry tomatoes
2 tablespoons olive oil + 1
1 – 8oz. package sliced mushrooms (we used one bell pepper)
1 teaspoon garlic powder
1 teaspoons onion powder
1 – 6 oz shredded carrot
1 – 28oz. can crushed tomatoes
1 bunch fresh spinach
Salt and pepper to taste
Roasted cashews, chopped (optional)

When i made this it was a last minute choice and so it was very unorganized Roy was freaking out as i was cooking it cause he was worried i was going to ruin some thing. i really did do things out of order. i know now how to do this much easier next time.

See how i started was just like the slide show with the cherry tomatoes on a pan with oil and spices into the oven.  preheated to 400 degrees. the fun part is that your supposed to leave them in till they burst (around 15 min according to the recipe but i didn't time).

I was cutting up the peppers to put in the pan with the olive oil.  and we use EVOO not just  olive oil.. lol.  next time we will do more then just one color this dish was very red. we like colorful foods.

Mean while the cherry tomatoes, well they started to smoke from about the 5th to the 8th minute. there could have been something in my over who knows. Roy thought they were on fire, he freaked out grabbed the pot holder practically pushing me over as i was trying to shave the carrots.

Shaving the carrots is one of those lessons i learned. i will be shaving those first next time to make the process less rushed. lol. i added the  carrot, garlic and onion powder, salt and pepper to the pan with the sauteing pepper. let that be for a few minutes. then add the crushed tomatoes. next time we will add a little more of them to help with the leftover reheating better.

Warm the tomatoes up to temp, add to couscous, welt in the spinach, and the cashews if wanted.

Now for the protein, i didn't fallow any recipe, i just got precooked frozen jumbo shrimps. poured some EVOO into the pan dumped in the shrimp after a pulled off the rest of there shells. and seasoned them to my happiness.

OK i am going to get on my soap box for a moment. i believe under no circumstances should any part of the shell should be on the shrimp at any time. not at a restaurant, and most sertiantly not in my house i don't want people to have to worry about biting into it. or having a pile of them on there plate, or napkin.

OK i am off the box now.

So we ate it was great Roy and his brother were here it was a great night.
