Cupcake Challenge!


So number 2 as mentioned before does a weekly cupcake challenge I have decided to join in on the fun this is my first week her seventh. This week the theme is Mothers day! My inspiration is this recipe Roy's mom gave me before she passed. Its for. Pumpkin roll, I decided I'd make it into cupcakes.




My adventure started after I got off work on Wednesday, I went to the nearest super store and got almost everything I didn't have but needed. I even picked up a new toy for Dingo (see big red ball) and some Izzie's for myself.  The store didn't have the papers for the cups, OK well they did just not the ones I wanted, they had some that looked likes Christmas, sports themed, and birthday. I just wanted white so I went to a market.

On my way there I was in the left turn lane waiting for the light when I notice in the mirror the truck behind me was super close, and the car behind me was put onto on common traffic. Apparently they were disagreeing with whom was suppose to be after me. I found this out when the truck hit me. I got up went and looked it was a a scruff mark on the trucks bumper I told the women who it me (who was on o2 at the time she hit me, which is a big pet peeve of mine, if you need an o2 you have a severe medical condition please don't get behind the wheel and hot me). I told her and the other driver they where both acting like fools that there lucky nothing worse happened , so I said was going to go have a good night  and I did! I got back onto the truck and went to the market planned but could find the papers well there was a peg for the, it was just empty. After 20 minutes or so and the help of a wonderful person that works there we found 3 packages, so I bought 2. Lol.


Ingredients:

3 eggs
1 cup sugar
1 teaspoon baking powder
1 teaspoon lemon juice
1/3 cup of pumpkin
3/4 cups of flour
2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon of nutmeg
1/2 teaspoon of salt
1 cup finely chopped walnuts
1 cup confections sugar
2 3 oz packages of creme cheese softened
4 tablespoons of margarine softened
1/2 teaspoon vanilla

Beat eggs and sugar in mixer high for 5 minutes
Stir in pumpkin and lemon
Sift flour, baking powder, spices and salt together in separate bowl
Fold into batter

From there just put into the cupcake pans, cooked for 8 minutes in preheated oven at 375. Cool them and make the frosting as follows: Combine 1 cup confectioners sugar, cream cheese, margarine and vanilla in bowl beating until smooth. I frosted and did the nuts on top. I took them to work the with nuts on them cupcakes were eaten more than those with out.

To make the roll fallow as below:

Spread into greased and floured 10 X 15 pan
Top with nuts
Bake at 375 for 15 minutes
Remove to cheese cloth sprinkles with confectioners sugar
Roll cake in towel and cool on wire rack
Combine 1 cup confectioners sugar, cream cheese, margarine and vanilla in bowl beating
until smooth.
Unroll cake and spread with filling. 
Roll cake carefully.
Sprinkle with powdered sugar
Store in refrigerator
